| Spicy Pork with Noodles |

1. Bring water to boil for noodles.
2. Cook them according to package instructions, about 45 seconds and drain.
3. Heat 2 tsp sesame oil in wok and sauté pork until it browns.
4. Stir in 4 tbsp ginger and 2 cl garlic and sauté about 30 seconds, stirring.
5. Reduce heat and add 4 tsp chili sauce, 4 tsp soy sauce, 4 tbsp sherry and 3
tbsp hoisin sauce and mix thoroughly.
6. Add 1 1/2 c chicken broth; raise heat and cook quickly to reduce liquid.
7. Remove from heat, stir in scallions and mix thoroughly with noodles.
8. Let stand, covered, for 30 minutes to blend flavors.
